The Perfect Dinner




A perfect day had to be completed with a perfect meal ...

After a long work day, I am all about fast, organic, healthy and delicious meals so I can kick back with friends, a book, or even a movie. I tend to “test” meals on the weekends and see how complicated they are and if they are good mid-week meals for me to cook.
I love ethnic food and am totally into flavor so this Fusion Chicken hits it on all marks for me……am sure you will agree.

Fast Fusion Chicken
Makes 4-6 servings

Sauté in a large, non-stick frying pan at medium-high heat until browned:
1 to 2 tbsp olive oil
2 cups cooked chicken breast, cubed, organic, grain fed, no antibiotics
½ large onion, chopped
2 cloves garlic, minced

Add and toss until thoroughly coated
1tbsp curry powder
Add:
1 red bell pepper, chopped
1 ¼ cups low-sodium chicken broth – organic
½ cup raisins
2tbsp tomato paste
1tbsp fresh lime squeezed

Reduce heat and simmer for 15 – 20 minutes or until thickened
